Akeem's recipe is for Spicy Sweet Smoked Prime Rib with Country Sweet sauce!

This is a great recipe for prime rib that will turn many heads at whatever occasion. Dry rub, and Sauce recipe included at the end of cooking instrucions.

Ingredients Needed:

  • 6-8lbs Boneless Prime Rib Roast.
    Spicy Sweet Dry Rub (recipe included)
  • Special BBQ sauce made with Country Sweet Sauce (recipe included)

Tools needs:

  • Meat Smoker
  • Meat Thermometer

Cook Time:6.5-8hrs

Cooking Instrucions:

  1. Cover the roast with the desired amount of dry rub.
  2. Seal the roast with plastic wrap. Let Marinate for 18-24 hrs.
  3. After marination period, take roast from fridge.  Set aside 35-45 minutes.
  4. Preheat smoker to 250 degrees.  Add a small handful of wood chips hickory, applewood; or a mix of the two would be great.
  5. Once smoker is preheated, place roast; fat side up directly on rack.  Reduce to 225degrees.  Add more wood chips.  Add wood chips every 1.5-2hours during cooking.
  6. Cook the roast 1hr/lb, or until the meat reaches desired temp:
    1. 125F: Rare
    2. 135F: Medium-Rare
    3. 145F: Medium
    4. 155F: Medium-Well
    5. 165F: Well Done 
      I personally recommend a145-155 temperature range. 

Once desired temperature is reached remove roast, and cover with aluminum foil. Let meat rest for 15-20 minutes (meat will continue to cook). Once meat has rested, cut, serve, and enjoy with the home made sauce made using Country Sweet Sauce.

Dry Rub Ingredients:

  • 3 cups packed brown sugar
  • 4.5Tablespooon Carolina Reaper Powder
  • 3 Tablespoon Salt
  • 3 Tablespoon Red Pepper
  • 2 Tablespoon Fresh Cracked Black Pepper
  • 2 Tablespoon Garlic Powder

Preparation:

  • Combine all Ingedients in a blender or food processor.  Blend until well combined.  Cover roast with desired amount of dry rub.  Store the rest in an airtight container, in a cold dry place. Rub should last 6-12 months.

Country Sweet Sauce Recipe:

  • (2) 21oz bottles of Country Sweet Barbeque Sauce
  • 1 cup pineapple juice
  • 1 cup Torani mango puree Blend
  • 3 Tablespoon Brown Sugar
  • 1 Tablespoon Granulated Sugar.
  • 2 Tablespoon Dave's Insanity Sauce (I personally prefer the Ghost Pepper Version, howver the Garlic Flavored Version of the Sauce works well)
  • 2 teaspoon minced garlic
  • 1 teaspoon lemon juice

Cooking Instructions:

  • Combine all ingredients in a medium-large saucepan.  
  • Bring to a boil on medium high heat.  Stir constantly.  Until sugars are dissolved and sauce has a consistent texture.  
  • Once sauce has a consistent texture bring to a low medium simmer.
  • Keep on a simmer.  Set aside 15-20 mins prior to serving roast.
  • Place in a fancy dish and serve with prime rib roast.
