Brian's recipe is for Country Tiger BBQ Wings!

Sauce Ingredients:

  • 1 bottle of Country Sweet Cooking Sauce
  • 1 Bottle of Tiger Sauce (Wegmans/Tops by the hot sauces)
  • 1 tbsp of Soy Sauce
  • 1/4 cup Brown Sugar
  • 1 tbsp of Sherry Vinegar

Sauce Method:

  • Combine all ingredients in a medium sauce pan over medium/high heat.
  • Reduce heat to medium/low and simmer, stirring frequently until thick. About 10 minutes.
  • Remove from heat and let cool until ready to use or refrigerate.

Wings Prep: 

  • Brine First
  • 4 cups of water
  • 1/4 cup kosher salt
  • 1/4 cup brown sugar
  • 4 whole cloves garlic, crushed
  • 1 sprig of fresh thyme
  • 1 tbsp black pepper corns, crushed 
  • 2 lbs Chicken Wings
  • 1 tbsp olive oil (use to coat after brining to help dry rub stick to wings)

Wings Method:

  • Combine the water, salt and sugar into a large bowl and stir until the salt and sugar have dissolved completely.
  • Take the chicken wings and remaining brining ingredients and place them into a gallon size Ziplock Freezer bag and pour the water, salt and sugar solution into the bag.
  • Seal Ziplock, pressing out as much air as possible.
  • Put into a bowl and refrigerate 12-24hours.

BBQ Dry Rub, season liberally to taste (Recipe below)

Dry Rub:

  • 1/4 cup brown sugar
  • 1 tbsp Weber Kick'n Chicken Seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/4 tsp smoked paprika

Dry Rub Method:

  • Combine all ingredients in a bowl and stir.
  • Ready to use.
  • Store in a air tight container.

Game Day Cooking:

  1. Remove the wings from the brine, and pat the wings dry with paper towels.
  2. Coat the with olive oil and season liberally with BBQ Dry Rub on all sides.
  3. When ready to cook, take 30 charcoal briskets and get them fully lit in a charcoal chimney.  Once glowing and starting to ash over add to one side of your grill. For a nice smoke add a chunk of apple wood on to the coals.
  4. Add the chicken wings to the grill grate away from the lit charcoal and smoke for 1 and a 1/2 hours or until chicken wings reach 170 degrees Fahrenheit on an instant read thermometer.
  5. After you get to 170 degrees Fahrenheit, fill a charcoal chimney and get the charcoal fully lit, glowing and beginning to ash over.  Remove your grill grate, with wings still on the grate and carefully add your newly lit coals.
  6. Replace grill grate and  sear the wings, turning with grill tongs for 3-5 minutes on each side, or until the wings are golden brown on each side.  (careful they sear up fast)
  7. Remove the wings and toss in the Country Tiger BBQ Sauce in a large bowl.  Serve on a plate with your favorite sides and enjoy!
